This post is just to tell you that the following sauce, the ALFREDO SAUCE, is absolutely unknown in Italy. The point is that the “Fettuccine all’Alfredo“, so famous in US, are absolutely unknown in Italy. But if you go through the history of this pasta, you discover that on Via della Scrofa in Roma, Alfredo in his restaurant was cooking a kind of pasta very very similar to the current one.
So, at the end, here attached you find the real italian receipt of this pasta, it wants to be very very close to the old one 😉
